🥣 Ingredients
For Dosa Batter
1 cup rice
½ cup urad dal (split black gram)
2 tbsp poha (flattened rice)
Salt to taste
Water as needed

For Potato Masala
3 boiled potatoes (mashed)
1 onion, sliced
2 green chilies, chopped
1 tsp mustard seeds
½ tsp turmeric powder
A few curry leaves
1 tbsp oil
Salt to taste
For Coconut Chutney
½ cup grated coconut
2 tbsp roasted chana dal
1 green chili
Small piece of ginger
Salt to taste
Water as needed
For Tomato Chutney
2 tomatoes, chopped
1 onion, chopped
2 dried red chilies
1 tbsp oil
1 tsp mustard seeds
Curry leaves
Salt to taste
👩🍳 Instructions
1. Prepare the Dosa Batter
Soak rice, urad dal, and poha separately for 4–5 hours.
Grind into a smooth paste using water.
Add salt and ferment overnight (8–10 hours) until it rises and turns slightly bubbly.
2. Make the Potato Masala
Heat oil in a pan and add mustard seeds, curry leaves, and green chilies.
Add sliced onions and sauté until soft.
Mix in turmeric, salt, and mashed potatoes. Stir well and cook for 2–3 minutes.
3. Prepare Chutneys
Coconut Chutney: Blend coconut, chana dal, chili, and ginger with water until smooth.
Tomato Chutney: Sauté tomato, onion, and red chilies, blend smooth, and temper with mustard seeds and curry leaves.
4. Cook the Dosa
Heat a non-stick tawa, pour one ladle of batter, and spread thin in a circular motion.
Drizzle oil around the edges and cook until golden brown.
Place a spoon of potato masala in the center and fold the dosa.
