Ingredients for Broccoli Soup:

  • 2 cups broccoli florets (main ingredient for broccoli soup)

  • 1 small onion, finely chopped

  • 1 small carrot, finely chopped

  • 2 tbsp butter

  • 1 tbsp all-purpose flour (maida)

  • 1½ cups milk

  • ¼ cup grated cheese (cheddar or processed)

  • 2 tbsp fresh cream

  • Salt to taste

  • ½ tsp black pepper powder

  • A pinch of red chilli flakes

Instructions for Creamy Broccoli Cheese Soup:

  1. Sauté the Vegetables for the Soup Recipe:
Heat butter in a pan. Add onion, carrot, and broccoli florets. Sauté for 2–3 minutes until slightly soft. This step builds the flavor base for your broccoli soup.

  2. Add Flour for Creamy Texture:
Sprinkle all-purpose flour over the vegetables and stir well. It removes the raw flour taste and thickens the soup recipe, giving it a rich, home style soup texture.

  3. Pour Milk Slowly:
Gradually pour milk while stirring continuously to avoid lumps. This ensures a smooth and creamy base for the broccoli soup.

  4. Cook and Blend:
Let the soup simmer for 12–13 minutes until the vegetables turn soft. Turn off the heat and blend the mixture to make a smooth, creamy broccoli soup.

  5. Add Cheese and Cream:
Pour the blended mixture back into the pan. Add grated cheese and fresh cream. Stir until the cheese melts completely, making your creamy broccoli cheese soup rich and flavorful.

  6. Season and Serve:
Add salt, black pepper, and a pinch of red chilli flakes. Mix well and serve hot.
