👩🍳 Method
Step 1: Prepare the Kadhi Batter
Take 2 cups of curd in a mixing bowl and whisk until smooth.
Add 2 cups besan and 2 cups water gradually to make a lump-free batter.
Mix in turmeric powder, red chili powder, and salt. This batter forms the base of your flavorful kadhi chawal.
Step 2: Make the Tempering
Heat olive oil in a kadhai to give your home-style curry a light, healthy twist.
Add cumin seeds and let them crackle.
Add hing, dry red chilies, curry leaves, onion, and potatoes (optional).
Sauté until golden brown and aromatic — this tempering adds depth to the kadhi recipe.
Step 3: Cook the Kadhi
Pour the prepared curd-besan batter into the tempering.
Stir continuously to prevent lumps and curdling.
Cook on medium flame for 20–25 minutes until the kadhi thickens and the raw besan flavor disappears.
Your creamy home-style curry base for kadhi chawal is now ready.
Step 4: Prepare the Pakoras
In a bowl, mix besan, turmeric powder, ajwain, salt, and a little water to make a thick batter.
Heat olive oil in a frying pan.
Drop small spoonfuls of batter and fry until golden brown on both sides.
These crispy pakoras make the kadhi recipe more authentic and satisfying.
Step 5: Combine & Serve
Add the fried pakoras to the cooked kadhi and simmer for 5 minutes.
Garnish with fresh coriander leaves for that final touch.
Serve hot with steamed rice — your comforting bowl of Kadhi Chawal is ready!
This dish is a complete healthy Indian meal that represents the simplicity and warmth of Indian home cooking.
